since i'm not a buckless yooper we have lots of opportunities for new and interesting wild game epicurean adventures for odin. first off, we thought we'd try a venison summer sausage recipe that's quickly become a family favorite. it takes three days to cure properly so we haven't had a chance to taste it, but we can smell it; if you've ever smelled raw venison, you'll know what i'm talking about :-)
10 lbs venison burger
10 tsp curing salt / tender quick by morton
5 tsp mustard seed
7 tsp cracked peppercorn
7 tsp garlic salt
4 tsp hickory smoke salt by mccormick
7 tsp seasoning salt
in a large container, combine venison with all the above spices. knead for 3 days, on the 3rd night, shape into small loaves.
place on baking sheets in a 180 degree oven for 12-14 hours. let them cool and wrap in wax paper and then tin foil.
