the eric update - day 545: odin's epicurean adventures! cranberry orange muffins!

and i guess while we're waiting for the venison summer sausage to cure, it's as good at time as any to let odin have his first taste of homemade cranberry orange muffins! the recipe is from the new england cranberry company and it's a great recipe if you don't like your muffins too sweet.

Ingredients:

3/4 cup of milk (a higher fat content will make muffins more moist)
1/2 cup vegetable oil
1 egg
1 tablespoon grated orange peel
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoons salt
1 cup dried cranberries

Directions:

Preheat oven to 400 degrees. Grease bottoms only of 12 muffin cups or line with paper baking cups.

Combine dry ingredients, orange peel and cranberries. Whisk together milk, egg and oil and slowly add to flour mixture until all ingredients are thoroughly combined. Spoon batter into muffin tins. Bake for 20-25 minutes, or until edges begin to brown.
